Kraus Honored with Food Safety Leadership AwardBrian Kraus, director of food safety and regulatory compliance with Wells Enterprises, Inc., received the International Dairy Foods Association's Food Safety Leadership Award at Dairy Forum 2018 in Palm Desert, California on January 24. The award honors an individual, group or organization for demonstrating outstanding leadership in enhancing food safety within the dairy products industry. Kraus has been a driving force for excellence in food safety during his career spanning more than 30 years.
Over the last 10 years, Brian has shaped the food safety systems within the Wells organization and he has emerged as a leader for the broader dairy products industry. He has trained employees at Wells on effective preventive controls in ice cream production and serves as a subject matter expert and trainer in a number of dairy industry food safety programs. Brian is engaged with the industry's Listeria Research Consortium, a group working to find new and innovative solutions for the control of Listeria monocytogenes, and he is involved in research on the control of persistent Listeria in dairy processing environments.
Brian's food safety expertise also includes allergens. "Allergen Control Verification & Validation; Food Safety Plan Preventive Control" was the title of his project for the Online Master of Science in Food Safety program at Michigan State University (MSU). His work in allergens has gotten him noticed in both the business and academic arenas. His research provided both Wells and the industry with a much-needed tool for verification and validation of allergen control while the MSU food safety program offered Brian the opportunity to utilize his project information and data in presenting a training section within the Allergens Summer Short course.
